SHORT DESCRIPTION:typical salami of the Umbria region thanks to the research of a small delicatessen owner in the municipality of San Venanzo who for
first rediscovered this ancient tradition of leaving the pork loin joined to the lard from the underside, hence the name sella.
At first sight it looks similar to a ham but with the fatty part often present in a prevalent manner.

TASTE:very fragrant thanks to the particular mix of spices used both in the seasoning and in the refinement phase

RECOMMENDED PAIRINGS:as an appetizer together with other cured meats or as a single dish as a filling for the typical Umbrian street food, torta al testo

CONSERVATION:Since it is a seasoned salami but not protected by casing, store in the fridge at 4°C.
