Description

Presentation: a wine with a delicate color and tender varietal definition of flowers, lavender and hawthorn, but at the same time the minerality is evident and the scent is characterized by salty tones and clay in the sun, savoury. A wine obtained from two different types of Malvasia, the Bianca Lunga with a tight bunch and thick skin and the Candia with a loose bunch, large and delicate grape. They are both harvested at the beginning of October and are vinified in white in a steel vat where they ferment at free temperature with the yeasts of the grapes for 10 days; the wine undergoes the first racking with the moon of February. A further racking at the end of March to prepare the wine that is bottled at the beginning of April. No sulphur is added at any stage of processing or even in the final bottling. In the vineyard, principles of absolute respect for nature are followed (use of sulphur and copper) and only rarely is the soil enriched with fertilizer obtained from the company's animals. The Company : Collecapretta is first and foremost a mixed agricultural company with livestock (Azienda Agricola Mattioli Vittorio) that has lived and produced for three generations on the same lands protected by the Martani Mountains in the Spoleto countryside. The management method is natural, with the utmost respect for natural cycles and excluding the use of herbicides, pesticides and weed killers. The vineyards are traditional to the area - we are in the homeland of Trebbiano spoletino where we also find grechetto, ciliegiolo and sangiovese above all - with some extra-regional contributions that however respect what happened after the Second World War with the planting of vines such as barbera or merlot throughout the region. The company has about 50 hectares in total of which only 6 are vineyards.
